At Finca Las Huertas, conditions are great for quality but tough for producers. They must deal with high moisture and humidity, cloud cover, and even low temperature at that altitude.
Carlos Amaya’s agroforestry approach results in 97% shade density in his farms. Shade density helps reduce soil erosion, stabilise slopes, retain more surface water and enrich the soil with essential nutrients. Additionally, these shade dense system have proven to store more carbon in soil and biomass, making them important allies in the fight against climate change.
After being picked at peak ripeness -Carlos controls this with Brix readings- coffee cherries then undergo an 88-hours submerged fermentation stage in barrels, before going to raised beds to dry for 30 days.
